Year-old wedding cake wasn't that bad

Yesterday, Brendan and I celebrated our one-year wedding anniversary. In keeping with tradition, we had saved a small cake from our wedding and made it part of the mini celebration.

To be honest, we had really low expectations about how the cake was going to taste after a year in the freezer. I had visions of us choking down a few crumbs, just to say we tried it, and tossing the rest in the trash.

Boy, were we shocked when the cake was not only edible, it was really good! Maybe it was the fact that it was carrot cake, and that “keeps” better than most cakes, or maybe all the credit goes to Country Fruit Market in Kankakee, for making a great cake to begin with. Or maybe it was my prompt and careful packaging in Seran wrap. (OK, that probably wasn’t it.)

Regardless, we were treated to some yummy carrot cake last night. And now there’s more room in the freezer!

    Hi Denise and Happy Anniversary to you and Brendan. When i got married, i was shocked when I ordered my cake through Sugar and Spice and on your first anniversary, they baked you a fresh cake so you didn’t have to freeze one.
