Tips for cooking bacon, sweet corn

Brendan and I had BLTs and fresh sweet corn for dinner last night. Here are two tips that make preparing each of them a little easier:

– Cook the bacon in the oven. It gets just as crispy as if you pan-fried it, plus it stays flat, which is nice for sandwiches. It also doesn’t require any babysitting or turning, which means no grease splatters on you or your stovetop. I preheat the oven to about 425 and set the timer for 20 minutes, cooking longer if needed. A pound of bacon will fit on one rimmed sheet pan. The pieces will be crammed together at first but shrink as they cook.

– Cook the corn in the microwave. Leave it in the husk and zap it for about 90 seconds. Then let it sit for at least a few minutes, and be careful to avoid steam burns when you peel it.
